Dessert: Peanut Butter Crisps



1 cup dark corn syrup
2 cups sugar
2 cups creamy peanut butter
8 - 12 cups dry corn flakes

Bring corn syrup and sugar to a boil. Remove from heat and stir in peanut
butter and corn flakes, shape into balls.

The Skinny: Use low fat peanut butter and your favorite sugar substitute.

Easy Monkey Bread
Easy Monkey Bread

2 canisters dinner roll dough
1/4 pound butter, melted
2 Tbsp. cinnamon
1/3 - 1/2 cup sugar

Cut uncooked dinner roll dough into quarters or 1/2 inch
pieces and place in a large bowl. Pour melted butter, cinnamon
and sugar over dough and mix well to coat all pieces of dough.
Pour mixture into a greased Bundt pan and bake for 30 minutes at 350 degrees. Allow to cool 5 minutes and flip Bundt pan upside down onto a plate to release the bread. Serve warm by picking off pieces of the cooked dough.

The Skinny: Use your favorite sugar substitute.

1/2 cup Smithfield ham, finely chopped
1/2 cup shredded sharp cheddar cheese
1/3 cup mayonnaise
1 tsp. Worcestershire sauce

Combine all ingredients and mix well. Serve with crackers.
If you do not have Smithfield ham on hand, you may use jars
or cans of Smithfield or deviled ham.

The Skinny: Use light mayo.

1/3 cup brown sugar
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
6 - 8 navel oranges, cut into slices

Combine sugar, cinnamon and nutmeg and sprinkle over top of oranges.
Let stand a few minutes before serving. This light dessert is simple
yet elegant.

The Skinny: Use your favorite sugar substitute.

Roasted Corn Off the Cob
Roasted Corn Off the Cob

4 ears of fresh corn
3 Tbl of olive oil
Sea salt and pepper to taste

Peel the corn. Stand an ear on your cutting board pointy side up and
hold firmly at the top. Take a sharp knife (preferably chef's knife
but even a bread knife will work) and shave the corn next to the cob
to release the kernels. They'll spill down onto your cutting board.
It will take about 5 strokes to peel each cob. Repeat with the other cobs.

Put the kernels in a Pyrex pan (9 inches) or even a bread pan. Drizzle
the olive oil on top and season to taste. Then swirl the corn to
distribute the olive oil.

Roast the corn in a very hot oven -- 425 degrees for 15 minutes.
Let stand for a few minutes before you serve it or you'll scorch your mouth.

For variations, you can add oregano or Italian herbs to give it an
Italian twist. You can even experiment with a little cumin, chili powder,
or cayenne to zip it up.
It just depends on what you're serving the corn with. You decide.
I haven't ruined it yet! I'm sure you won't either.

Deviled Eggs

6 eggs hard boiled
1/2 cup mayonnaise
1 Tbsp. mustard
3 Tbsp. dill or sweet relish, depending on your taste
1/4 tsp. curry powder
1/4 tsp. salt
Paprika

Place eggs in shell in rapidly boiling water, enough to just cover eggs,
for 10 minutes. Drain water and allow the eggs to cool.
Gently peel shell away and slice eggs lengthwise.
Gently remove hard boiled yolk from each egg and place in a bowl.
Add mayonnaise, mustard, relish, curry powder, and salt to the egg yolks
and mix well. Spoon mixture back into egg white halves and sprinkle
with paprika. Serve chilled.

The Skinny: Use light mayo.

2 tb Finely chopped onion
6 tb All-purpose flour
1 qt Milk
1/2 ts Poultry seasoning
1/2 ts Ground nutmeg
1/4 ts Salt
Dash Worcestershire sauce
Dash hot pepper sauce

Crumble sausage into a large saucepan; cook over
medium-low heat. Add onion; cook and stir until
transparent. Drain, discarding all but 2 tablespoons
of drippings. Stir in flour; cook over medium-low
heat about 6 minutes or until mixture bubbles and
turns golden. Stir in milk. Add seasonings; cook,
stirring, until thickened.

Serve over biscuits or over chicken fried steak.

Yield: 4 servings.

Pancakes

Ingredients
˝ Cup Milk
2 T Melted Butter
1 Egg
1 Cup Flour
2 t Baking Powder
2 T Sugar
˝ Salt

Directions
Preheat your oven to 200°. This is so you can put your pancakes in there to keep warm while you're cooking the rest of them.

Either sift together your dry ingredients, or mix together with a fork. Lightly beat together your milk, butter, and egg, add to your dry ingredients, and stir together with a whisk until the mixture is dampened. You might have to add a little more milk, so that you ultimately wind up with a batter that resembles heavy cream.

If you have the luxury of a griddle, by all means, break it out, and set it to 375° - 400°. If not, a sauté pan over medium to medium high heat will suffice. Grease your cooking surface with a little bit of Crisco or other shortening (I tend to use a paper towel with a clump of shortening on it and go around the surface a few times, so as to grease the surface but not to leave it with a puddle). With a tablespoon (or small ladle), pour some batter onto your surface (if you have enough room, do a few at a time). You'll know it's time to flip your pancakes when the tops are covered in little bubbles. Flip 'em, and after about a minute, lightly touch the top of them to gauge if they feel done (and/or, with the edge of your spatula, peak underneath to see if they're done). When they are, put onto an oven-safe plate and put in your oven to keep warm. Grease your pan/griddle, and repeat.

Serve with butter and maple syrup, and up the ante with fresh fruit, bacon, juice and coffee.

Curds & Whey
Curds & Whey

* 12 cups fresh water (3 quarts)
* 6 cups instant dry milk powder
* 1 to 1-1/2 cups white vinegar
* 1/2 teaspoon salt

Heat the water in a very large pot over low heat. Stir in the dry milk powder as the water heats. Heat it gently so the milk won't burn. When the milk is very hot (about 120°), stir in about a cup of vinegar. Stir the mixture up gently. Turn off the heat and allow the mixture to sit for about 10 minutes, don't skip this part. The mixture has to sit for the milk to have a chance to curdle. Now there should be a big clump of white cheese curd in the middle of a pool of clear amber liquid. Look at it to make sure. If the liquid is still milky, then you need to add more vinegar to finish curdling the cheese. Add a couple of spoonfuls of vinegar at a time and stir gently. More of the cheese will curdle and clump up. Continue until all of the cheese is curdled, and the liquid is clear. This liquid is called whey. The white clumps are called curds. You have made curds and whey, just like Miss Muffet.

Now the cheese must be rinsed. Line a strainer or collander with cheese cloth, or a thin cloth napkin, or a clean baby diaper. Get the cloth wet with a little water. Carefully pour the big pot of curds and whey into the strainer. Let all of the whey strain off. Run a little cold water over the curds to cool them down, and to rinse out all of the whey. Squeeze the curds with your fingers to break them up, and rinse them thoroughly. Gather up the cloth around the curds. Squeeze it to remove as much of the moisture as you can. This part takes a few minutes. Be patient, and squeeze the cloth covered ball until it is quite dry.

Now, open up the cloth and transfer the cheese curds to a bowl or container. You will have between 1 and 1-1/4 pounds of cheese curds, or between 3 and 4 cups of firmly packed curd. Stir the salt into the curds.

Ricotta or Cottage Cheese: The cheese you have now will work as ricotta cheese in lasagna, or pretty much any where else. To turn it into cottage cheese, add a little evaporated milk or yogurt to "cream" it and stir to combine. You can divide the mixture in half and make some of each if you want to give them both a try.

2 - 3 pounds round steak, tenderized
1 cup flour
1 tsp. salt
1 tsp. garlic powder
2 tsp. Old Bay seasoning or paprika if you can't find Old Bay
Fresh ground pepper
2 eggs, beaten
1/2 cup milk
Vegetable oil

Gravy
1Tbsp. butter
6 Tbsp. Flour
3 cups hot milk
Salt and pepper

Cut steak into 4 pieces. Combine flour, salt, garlic powder, Old Bay
or paprika and pepper on a plate. Combine eggs and milk in a bowl.
Dip steak in egg/milk mixture then coat with flour mixture.
Cook steaks in hot oil in a heavy skillet. Remove steaks and keep warm.
Add butter to skillet and mix with drippings. Add flour and cook and
stir until flour browns. Add hot milk and stir until thickened.
Season with salt and pepper and pour over warm steaks.
This is an old Southern favorite. The steaks are tender and tasty
and the gravy adds a nice touch.

The Skinny: Use non-stick spray instead of oil and substitute low fat milk.

Chicken Pot Pie
Chicken Pot Pie

Servings:

Serves 4 to 6 very hungry people.

Ingredients:

2 Pillsbury pre-made pie crusts (1 package)
2 packages of chicken pieces cut into large dice
(Louis Rich makes a 12 oz. package. You can do Italian flavor or Grill
flavor; you choose. Or you can use any leftover chicken you have from the
grill or roasting, etc. You'll want 2 to 3 cups of chicken pieces.)
1 cup frozen peas
2 cups pre-cooked potato chunks (You can use any leftover potatoes you
have -- red-skinned, Idaho, whatever. If you don't have any pre-cooked
potatoes, you can take one large one and zap it in the microwave and
then cut it up. (Follow your microwave directions for a baked potato.)
Peeled or unpeeled; it's your choice. I'm Irish so I have to have potatoes
in my pot pie, but you can always leave them out and add another veggie
of your choice, like corn or small pieces of broccoli or zucchini or
even peppers. One cup of whichever one you choose.)
1 cup chopped celery
1-1/2 cups of carrot pieces. (To make life easy you can get them pre-cut,
even crinkle cut, in your produce section.)
2 cups of chicken gravy. (Use the canned, pre-prepared kind.)
Salt and pepper to taste

Instructions:

Use a 9-inch square pan or deep-dish pie pan. Take one crust out of the
package and ease it into the pan. With a square pan it will crunch up in
the corners, but that's just a great piece for those who like lots of crust.
No problem. With both sizes, the crust is likely to stick up over the
sides a bit. This is good.

In a large bowl, combine your ingredients for the filling. Stir and
season with salt and pepper. You can even toss in a bit of cayenne if
you like your food "zippy." Pour the filling into the first crust.
Take the second crust and lay it over the top of the filling. Fold the
first crust edges over the top crust or just pinch and tuck it into the
sides so there are no large gaps for filling to ooze out of.
Easy Cherry Crumb Pie

1 - 9 inch pie crust
1 Tbsp. cornstarch
1 Tbsp. cold water
1 can (21 oz.) cherry pie filling
1/2 cup quick-cook oats
1/4 cup flour
1/4 cup brown sugar
1/4 cup butter

Combine cornstarch and water and stir until smooth. Add cherry pie filling
and mix. Pour into pie crust. Combine oats, flour, brown sugar and butter
and mix to create a crumbly mixture. Sprinkle over cherry pie and bake
for 30 - 40 minutes at 350 degrees. Allow to cool before serving.

2 slices of bread (any kind of bread)
Approximately 1 cup milk
2 eggs
2 cups corn meal
1/2 cup sugar (use more for a sweeter taste)
1 Tbsp. vegetable oil

In a saucepan, pinch up 2 slices of bread and just cover with water.
Bring to a boil. Remove from heat . Add milk and 2 beaten eggs.
Stir in corn meal, sugar and oil. The batter should be the consistency
of pancake batter. ( Not too runny, not too thick.) Add more milk
if too thick. Spray 9 x 13-inch Pyrex dish with nonstick spray
and bake at 400 F degrees for 30 - 40 minutes or until golden brown.

The Skinny: Use your favorite egg and sugar substitutes and low fat milk.

7 lb. shank or rump end ham fully cooked
3/4 cup brown sugar
1 can pineapple rings
Maraschino cherries
Whole cloves

Rub brown sugar on the outer skin of the ham. Place pineapple rings
over brown sugar and place a cherry in the middle of each pineapple
ring and stud with cloves. Bake for 2 hours and 15 minutes at 325
degrees. Cool for 15 minutes before slicing and serving.

Raisin Sauce for Ham

1 and 1/2 cups water
1/2 cup raisins
1/4 cup brown sugar
1/2 tsp. cinnamon
1/4 tsp. ground cloves
1/2 tsp. dry mustard
2 Tbsp. butter melted
1 Tbsp. apple cider vinegar
1 Tbsp. flour

Boil water and add raisins. Return to boil for several minutes.
Add remaining ingredients and cook over low heat for 10 minutes.

and nutmeg and saute until tender and brown. Serve warm

8 yellow potatoes
3 to 4 Tbsp. butter
1/4 cup milk
Salt and pepper
1 pound lean ground beef
10-oz. frozen peas, thawed
10-oz. frozen corn, thawed
1 and 1/2 cups shredded cheddar cheese

Boil potatoes until tender and mash. Add butter, milk and salt and pepper
to taste. Meanwhile, brown ground beef in a skillet until fully cooked.
Drain fat. Place half the mashed potatoes in the bottom of a casserole dish.
Place thawed peas on top of mashed potatoes followed by cooked ground beef.
Place thawed frozen corn on top of ground beef followed by the remaining
half of mashed potatoes. Sprinkle with cheddar cheese and bake for
20 - 25 minutes at 350 degrees.

The Skinny: Use the leanest ground beef you can find and low fat cheese.

shallow bowl, blend pancake mix with poultry
seasoning, paprika and pepper. Dip flour-coated
chicken pieces in egg mixture, then in pancake mix
mixture. Let sit on wire rack while heating deep fat
to 375 degrees. Cook chicken pieces, turning once,
until a rich golden brown, about 20-25 minutes. Drain
on paper towels.] Yield: 4 servings. Variation: To
prepare EXTRA CRISPY CHICKEN, dip the chicken (after
it has been coated in the pancake mixture) back in the
egg mixture and again in the pancake mixture. Fry
until done. This cookbook is wonderful!! But my copy
is falling apart and I cannot find another. It has all
kinds of recipes from Big Mac sauce to soft pretzels.

1/2 cup brown sugar
1 Tbsp. water
4 eggs
1- 10 and 1/2 oz. can sweetened condensed milk
1 tsp. vanilla extract
1 cup slivered almonds, chopped

Combine sugar and water in saucepan. Stir constantly over medium heat
until sugar caramelizes. Put mixture in cake pan and swirl to coat bottom
of pan. Blend remaining ingredients in mixer at high speed for 20 seconds.
Pour over caramelized sugar. Cover pan and place into larger pan containing
enough hot water to cover 2 inches up the outside of smaller pan.
Bake at 350 degrees for one hour. Remove small pan from water and allow
to cool uncovered for 45 minutes. Place serving dish upside down on pan
and quickly flip over. Shake gently to loosen custard.

The Skinny: Use your favorite sugar and egg substitute and low fat condensed milk.

2 - 3 pound round rump roast or tenderloin
1 Tbsp. fresh ground pepper
1 tsp. salt
1/2 tsp. dried marjoram
1 tsp. dried thyme

Combine spices and mix well. Cover roast beef with spices and cook at
325 degrees for 1 and 1/2 to 2 hours depending on the size and the
desired doneness. If you are using a meat thermometer it should
reach 150 - 170 degrees. Let roast stand for 10 minutes before slicing.
Cut into thin slices.

Filling:

1/4 cup pecans, crushed
3 8-oz. packages cream cheese, softened
1/2 cup sugar
2 eggs
1 tsp. vanilla
1 Tbsp. orange rind, grated

Topping:

1 cup sour cream
1 tsp. vanilla
3 Tbsp. sugar

Sprinkle crushed pecans along the bottom of the graham cracker crust.
Combine filling ingredients together in a large bowl and mix until smooth.
Pour mixture into the pie crust and bake for 35 - 45 minutes at 350 degrees.
Allow cake to cool. Combine topping ingredients together and mix well.
Pour over cheesecake and bake for 5 minutes at 350 degrees.
Chill before serving

egg and sugar substitute.

* Cut the meat into 1/2-inch thick slices.
Pound the meat with a spiked meat mallet to tenderize. Cut each slice
crosswise into 3 pieces. Place in a large bowl. Cover with water and add
the salt and vinegar. Marinate for 2 hours. Combine the flour and pepper
in a plastic bag and add the meat, (do not pat dry) 1 piece at a time,
shaking to coat thoroughly. Heat the oil in the deep fryer or deep large
skillet, over medium heat, to 350 degrees. Add the meat in batches (do
not crowd) and fry until light brown, about 30 seconds per side. Drain
the meat on paper towels and place it on a heated platter that has been
tented with foil.
For the gravy, pour off all but 2 Tbls of the oil in the skillet, leaving
the browned bits. Heat over medium heat and add the flour, stirring and
scraping up all of the browned bits for 3 minutes. Remove from the heat
and gradually whisk in the milk. Stir in the salt and continue to whisk
until thickened, about 1 minute. Serve over the steaks and garnish with
parsley just before serving.

Make a paste out of the marinade ingredients. Coat
chicken evenly. Stack chicken pieces in a bowl. Cover
and refrigerate overnight or at least for several
hours. Mix pancake mix with other seasonings. Dip
pieces of chicken in milk, then in pancake coating.
Dust off excess. Lightly brown in skillet with 1/2
inch vegetable oil in it. Brown for 4 minutes each
side. Remove and place in a single layer on shallow
baking pan. Seal with flour. Bake for 1 hour at 350^F.
Uncover and baste again with milk Return, uncovered,
to oven heated to 400^F, to crisp for 10 minutes.

1 cup Maraschino cherries, drained
1/2 cup mini chocolate chips
1/4 cup nuts, chopped

Season 1/2 cup flour with salt and pepper to taste. Pat cube steaks dry
with paper towel and dredge in seasoned flour. Put aside while preparing
batter. Beat egg with milk, then gradually add remaining 1 cup flour, beating
constantly to make a smooth, thick batter. Season with salt and pepper.
Heat oil in a fryer to 370 degrees. Dip steaks into batter and place in
hot oil. Fry until golden brown, turning once, about 3-4 minutes per side. Be
sure to heat oil back to 370 degrees between batches. Drain on paper towels
before serving.

bowl for at least 1 hr. Whirl herbs; onion powder,
seasoned salt,instant chicken broth, and pepper in
blender. Combine with flour mixture while still wet
until thickly coated with flour. Melt enough
shortening or salad oil to make 1" depth large
skillet. Heat to 375. Fry chicken pieces, turning
once, 5 min. on each side. Lift, drain on paper
towels. When pieces are fried, drain fat from skillet.
Add one cup chicken broth to skillet, add chicken
pieces, cover skillet. Cook 15 min. or until fork
tender. This is a recipe entitled "Marie Walsh's
Kentucky Fried Chicken". I copied it out of a magazine
several years ago and have used it often. Its as close
to KFC as you can get

Coconut Key-Lime Pie

1 9-inch graham cracker crust pie shell
1 14-oz. can sweetened condensed milk
1 8-oz. package cream cheese, softened
1/2 cup key lime juice
2/3 cup coconut flakes, toasted

Place coconut flakes on a cookie sheet and bake at 350 degrees for several
minutes until golden brown. Combine condensed milk, cream cheese, and key
lime juice and 1/2 cup of coconut together and beat with a mixer until smooth.
Pour into graham cracker crust. Sprinkle with remaining coconut and chill
in the refrigerator for several hours until set. Garnish with lime slices
and serve. If you cannot find key-lime juice you may use lime juice from
fresh limes instead. Remember not to use evaporated milk instead or
sweetened condensed milk it will not set. Many key lime pies call for raw
eggs. This one is nice because no raw eggs are required. Some eggs are
now treated to reduce the threat of you becoming sick but we prefer to
completely eliminate the risk be not eating raw eggs at all.

The Skinny: Use light cream cheese.

thoroughly. Mix eggs and milk. Dip meat into egg
mixture, then into cracker crumbs. Brown, slowly, on
both sides in hot shortening. Season with salt and
pepper to taste. Cover tightly, and cook over very low
heat 45 to 60 minutes or until tender. Serve with
Southern Gravy over steaks.

Gravy: Make ready mix by combining first 3
ingredients in medium bowl. Store at room temperature
in pint jar with tight fitting lid. Shake before using.

Stir 1/4 cup ready mix into drippings. Cook and stir
until brown. (This is to cook the flour; do not burn
it.) Add water or milk; stir until thick and bouillon
is dissolved.

Combine all ingredients. Spread mix evenly over
each chicken piece and let sit in the refrigerator
overnight.
Heat oil to 400 to 425 degrees. Prior to placing
chicken in the oil, dip each piece first into a bowl
containing club soda and then lightly dust each piece
with pancake flour. After frying the chicken for 5
minutes, bake chicken at 350 degrees for about 30 to
35 minutes or until chicken is tender. While chicken
is baking sprinkle with a little bit of pancake mix
and a few drops of water.
This recipe is said to be finger lickin' good.

1 Tbsp. cornstarch
1 Tbsp. cold water
1 can (21-oz.) cherry pie filling
1/2 cup quick-cook oats
1/4 cup flour
1/4 cup brown sugar
1/4 cup butter

Combine cornstarch and water and stir until smooth. Add cherry pie
filling and mix. Pour into pie crust. Combine oats, flour, brown sugar
and butter and mix to create a crumbly mixture. Sprinkle over cherry
pie and bake for 30 - 40 minutes at 350 degrees.
Allow to cool before serving.

The night before, put the steaks in a dish in single layers. Wipe them on
both sides with an even coating of corn oil. Dust them on both sides with
a generous amount of season salt. Drizzle each steak with wine or juice.
Seal the dish in doubled foil or plastic wrap and refrigerate it for about
24 hours prior to preparing the final dish. Remove the steaks from the
fridge and coat both sides well in the Bisquik mix. Combine the butter with
the oil in a large skillet until melted. Brown both sides of each steak,
till crispy. Transfer right back to the same baking dish and seal in foil.

Since 1952, when Colonel Harland Sanders opened his first franchise, only
a select few have been privy to the secret "herb & spices" contained in the
billion-dollar blend. To protect the top-secret recipe, the company
claims, portions of the secret blend are premixed at two confidential
spice cos. and then distributed to KFC's offices, where they are combined.
In 1983, in his book "Big Secrets", author Wm. Poundstone hired a lab to
analyze a dry sample of the spice mix.
The surprising discovery was that instead of identifying "eleven herbs &
spices," the analysis showed only four ingredients: flour, salt, pepper,
and monosodium glutamate, a flavor enhancer. The cooking proceedure is
believed to be the other half of the secret. Colonel Sanders became famous
for using a pressure cooker shortly after its invention in 1939. He
discovered that hungry travelers greatly appreciated the 10 min.
pressure-cooking time (compared to the usual 30 min. it used to take for
frying chicken), and the new process made the chicken juicy and moist
inside. KFC is the 3rd largest fast-food chain in the country, and uses
around 500 million chickens every year.

1/2 cup powdered sugar
1 cup butter, softened
2 tsp. vanilla
2 cups all-purpose flour
2/3 cup finely chopped pecans
Dash of salt
Extra powdered sugar

Combine 1/2 cup powdered sugar, butter and vanilla in a large bowl
and beat with a hand mixer until smooth. Slowly add flour, pecans
and salt and mix until a dough forms. Shape dough into 1-inch balls.
Place on an ungreased cookie sheet and bake at 325 degrees for
15 - 20 minutes. Cookies will not brown. Allow cookies to cool slightly
and roll cookies in extra powdered sugar. When cookies are completely
cooled, roll in powdered sugar again and serve.

constantly. Add vanilla and nuts and beat with a mixer until mixture
is thickened and less shiny than before. Pour into a greased baking dish

1-inch squares.

Mix 1/2 cup of the flour, the salt, and pepper together. Pound the
mixture into both sides of the meat with the edge of a heavy plate or
mallet. Cut the meat into serving pieces. Beat eggs together with the
cream. Heat the oil in a heavy cast iron skillet over moderately high
heat. Reserve 3 tablespoons of the flour. Dredge the steaks in the
remainder of the flour, dip in the egg mixture, and then into the
cracker crumbs. Place the steaks in the hot oil and brown well. Turn
and brown other side. Reduce heat to medium, cover the skillet, and
cook for 15 to 20 minutes, turning occasionally, until the steaks are
cooked through and tender. Chicken fried steak should be well done,
but not dry. Remove the steaks from the skillet and drain on brown
paper bags. Keep warm. Add the onion slices to the pan and saute
quickly. Pour off all but 3 tablespoons of the fat in the skillet and
stir in the 3 tablespoons reserved flour. Stir to incorporate any
particles on the bottom of the pan and! ! cook for 1 to 2 minutes.
Stir in the cream, then the chicken broth. Season the gravy with
Worcestershire and hot sauce. Slice the meat across the grain and top
with the gravy. Yield: 6 to 8 servings

Pour into bottom portion of pie shell. Dot with butter. Place top
piecrust over cherry mixture and crimp together on the sides.
Cut several slits on the top of the crust. Bake at 425 degrees for
30 - 40 minutes or until golden brown and cherries are bubbling through
slits made on the top. Serve warm with vanilla ice cream if you desire.

The Skinny: Serve with frozen yogurt rather than ice cream. Also feel

2 tb All-Purpose Flour
1 Egg, Beaten
1 c Milk
3/4 c Bread Crumbs
-Parsley

Put minute steaks between pieces of wax paper. Use the flat side of a
wooden mallet and pound to 1/4" thick.

Beat the egg and dip the minute steaks, one at a time, into it. Mix
the bread crumbs, salt and pepper. Dip the minute steaks into the
bread crumb mixture. Heat the oil in a heavy skillet over medium-high
heat. Brown the steaks, 8 to 10 minutes per side. Place the steaks on
a warm platter. Keep hot. Stir the flour into the pan drippings. Stir
over medium heat until lightly browned. Using a whisk, stir in the
milk and cook until it thickens to gravy. Add water if needed to
thin. Add salt and pepper to taste. Return steaks to the pan and
simmer until ready to serve. Garnish with parsley and a side of
sliced tomatoes.

Combine frozen yogurt, sugar, water and espresso granules in a food
processor and process for several seconds until mixed well.
Spread into piecrust and freeze for at least 1 hour before serving.
The espresso granules are what you use to makeinstant espresso, just
like instant coffee granules.

It is a "minute" or "cube" steak (steaks bought in a store already
"tenderized") or round steak pounded out thin, breaded and fried in
hot oil so it develops a crust like typical fried chicken. The steak
should be around 1/4 inch thick. It's served topped with a white
cream (or milk) gravy.

Dip steaks in buttermilk mixture, dredge in flour mixture. Let stand
for 10 minutes on paper towels. Fry steaks in 1/4" vegetable oil in
a heavy skillet at medium high heat (375F) until browned, adding oil
as necessary. Remove steaks and drain on paper towels.

Pour off pan drippings, reserving 3 Tb. drippings. Add 1/4 cup of
flour; stir over medium heat until bubbly. Boil 1 minute, stirring
constantly. Add 2 cups milk; cook until thickened, stirring
constantly. Stir in 1/2 tsp. salt and 1/2 tsp. pepper. Add steaks to
gravy. Cover and simmer for 5 minutes.

I won't even begin to enter the fat and calorie information on this
one.

NOTE: This is a Southern version. Generally in Kansas, where I come
from, the recipe would be much simpler++just a pounded steak dredged
in flour and fried served with a simple milk gravy.

2 cups soft bread crumbs
1 quart milk
1 Tbsp. butter, softened
2 ounces unsweetened chocolate squares
2/3 cups sugar
2 eggs beaten
1 tsp. vanilla
Fat free Half and Half

Combine bread crumbs and milk in a large bowl and allow to sit for
about 30 minutes. Meanwhile, spread butter along the bottom and sides
of a one quart baking dish. Melt chocolate squares in the microwave
or saucepan being careful not to scorch. Add sugar to the chocolate and stir.
Slowly stir in milk and bread mixture and eggs and vanilla.
Pour into baking dish and bake at 350 for about 2 hours or until deep brown.
Serve pudding warm with cream poured over the top.

One of the old standbys, this was served in many of the roadside diners
that catered to truck drivers. It soon became a favorite of just about
everybody.

Cut the steak crosswise into 4 serving pieces. Place one piece between two
sheets of plastic wrap then using a rolling pin or meat pounder, pound to a
1/4-inch thickness. Repeat with the remaining pieces. In a pie plate, beat
the milk and eggs together, in a second pie plate combine the flour and the
seasonings together. Dip each piece of steak first into the egg mixture
then into the flour mixture, coating completely. Shake gently to remove the
excess flour mixture. Melt the butter in a 12-inch skillet, using medium
heat, fry the steaks, two at a time, about 5 minutes on a side or until
golden brown on each side. Serve with biscuits and cream gravy. Each
serving without gravy contains: Cal Pro Fat

Cream Gravy In a heavy-bottomed saucepan melt the butter over medium heat.
As soon as the butter begins to bubble (don't let it brown), add the flour
and cook together for 1 to 1 1/2 minutes. Slowly whisk the chicken stock
into the butter-flour. Stick the clove into the onion an add to the sauce
along with the bay leaf. Simmer for 30 minutes, stirring now and then, and
skimming as needed. Remove the onion and bay leaf before using. Makes about
4 cups.

1/2 cup dried currants
1/4 tsp. ground cinnamon
3 large eggs
1/4 cup sugar
2 and 1/2 cups milk
3/4 cup heavy cream
1/8 tsp. ground nutmeg

Coat the bottom of a 7 x 10 baking dish with butter. Trim the crust
off bread slices and butter both sides of the bread slices.
Place 4 slices at the bottom of the baking dish. Combine raisins,
currants and cinnamon together and toss. Place half the mixture over
the 4 bread slices. Add 4 more buttered bread slices and the other
half of raisins and currants. Top with remaining 4 slices of buttered
bread. In a mixer or blender, mix eggs until frothy, then add sugar,
milk, cream and nutmeg and beat until mixed. Pour mixture over bread
and raisin mixture. Allow pudding to sit at room temperature for
about 30 minutes so bread can absorb liquid. Cover with aluminum foil
and bake at 350 for 30 minutes, remove foil and bake 30 minutes longer.
Serve warm.

Tenderize round steak. Dip in milk and then flour, salt and pepper to

Stir until smooth. Add 1 qt milk. Stir and cook until until thickened for
steak gravy.

Make a paste out of the marinade ingredients. Coat chicken evenly. Stack
chicken pieces in a bowl. Cover and refrigerate overnight or at least for
several hours. Mix pancake mix with other seasonings. Dip pieces of chicken
in milk, then in pancake coating. Dust off excess. Lightly brown in
skillet with 1/2 inch vegetable oil in it. Brown for 4 minutes each side.
Remove and place in a single layer on shallow baking pan. Seal with flour.
Bake for 1 hour at 350^F. Uncover and baste again with milk Return,
uncovered, to oven heated to 400^F, to crisp for 10 minutes.

2 Tbsp. vegetable oil
1 egg, beaten
1/2 cup skim milk
1 and 1/2 cups sifted reduced fat baking mix
3/4 cup sugar
1/2 cup brown sugar
1 Tbsp. cinnamon

Heat oven to 375 F. Combine oil, egg, and milk.
Sift together dry ingredients. Add dry ingredients to milk mixture
and mix well. Pour into greased 9 x 9 x 2-inch pan. Combine brown
sugar and cinnamon and sprinkle it evenly over the cake.
Bake for 25 minutes.

~Cut steak into serving size pieces. -Beat an egg and dip pieces into egg.
~Crush saltine crackers to a fine mixture and dip egg covered meat into it.
~Pan fry in a small amount of oil at medium. heat until golden brown. -Then
turn on other side and do the same. ~After second side is done browning,
reduce heat to low and cover for about 20 min. -Before removing from pan
increase heat and remove lid (To help reduce moisture) for a few minutes.
~All done, then pepper to taste. No salt needed it's already in the
crackers. Enjoy!

Easy Cherry Crumb Pie

1 - 9 inch pie crust
1 Tbsp. cornstarch
1 Tbsp. cold water
1 can (21 oz.) cherry pie filling
1/2 cup quick-cook oats
1/4 cup flour
1/4 cup brown sugar
1/4 cup butter

Combine cornstarch and water and stir until smooth. Add cherry pie
filling and mix. Pour into pie crust. Combine oats, flour, brown sugar
and butter and mix to create a crumbly mixture. Sprinkle over cherry
pie and bake for 30 - 40 minutes at 350 degrees.
Allow to cool before serving.

1 1/2 lb Round steak

1 x Meat tenderizer

~Cut the round steak into slightly small portions and beat with a mallet or
back of a knife until thin and all ratty looking. -Beat the eggs with a
little water. ~Mix the flour, salt, pepper, and about 1 1/2 t of tenderizer
together. -Dredge the meat through the eggs and then in the flour mixture.
~Fry on medium-high heat in oil and butter. Be careful that it doesn't
stick to the bottom of the pan too bad. As you cook, sprinkle little bits
of the flour mix in the pan so that you get a lot of good drippings you'll
use that for the gravy. When the meat is cooked through, drain on paper
towels while you make the gravy. -Milk Gravy drain most all of the oil out
of the pan, and add about 1/2 stick of butter or marg. -Stir around good
over medium low heat to scrape all the drippings off the bottom of the pan.
~Sprinkle some more of the flour mix into the pan until you almost have a
roux. ~Add milk a little bit at a time, stirring real well with a flat
spatula to get it all mixed up. When desired consistency, remove from heat
and serve with the steak. -Try serving with Black-eyed peas and lots of
mashed potatoes or rice.

Cover chicken with mixture of water and salt. Chill in
bowl for at least 1 hr. Whirl herbs; onion powder,
seasoned salt,instant chicken broth, and pepper in
blender. Combine with flour mixture while still wet
until thickly coated with flour. Melt enough
shortening or salad oil to make 1" depth large
skillet. Heat to 375. Fry chicken pieces, turning
once, 5 min. on each side. Lift, drain on paper
towels. When pieces are fried, drain fat from skillet.
Add one cup chicken broth to skillet, add chicken
pieces, cover skillet. Cook 15 min. or until fork
tender. This is a recipe entitled "Marie Walsh's
Kentucky Fried Chicken". I copied it out of a magazine

1 9-inch graham cracker piecrust
14 oz. sweetened condensed milk
8 oz. egg substitute
1/2 cup key limejuice
8 oz. whipped topping

Preheat oven to 325. Combine condensed milk, egg substitute and
limejuice and whisk together. Pour mixture into piecrust and bake
for 15 minutes. Cool on a wire rack and then transfer to refrigerator
for a couple of hours before serving. Garnish with whipped topping.

Classic Chicken Pot Pie
What makes a classic? Chicken and mixed vegetables in a rich homemade white sauce fill a flaky pie crust that's perfection.

Ingredients:

Crust
1 box (15 oz) Pillsbury® refrigerated pie crusts, softened as directed on box

Filling

1/3 cup margarine or butter
1/3 cup chopped onion
1/3 cup Gold Medal® all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 can (14 oz) chicken broth
1/2 cup milk
2 1/2 cups shredded cooked chicken or turkey
2 cups Green Giant® frozen mixed vegetables, thawed

Prep Time: 25 Minutes (Ready in 1 Hour 5 Minutes)

Preparation Directions:

1. Heat oven to 425°F. Make pie crusts as directed on box for Two-Crust Pie using 9-inch glass pie pan.
2. In 2-quart saucepan, melt margarine over medium heat. Add onion; cook and stir 2 minutes or until tender. Stir in flour, salt and pepper until well blended. Gradually stir in broth and milk, cooking and stirring until bubbly and thickened.
3. Stir in chicken and mixed vegetables. Remove from heat. Spoon chicken mixture into crust-lined pan. Top with second crust; seal edges and flute. Cut slits in several places in top crust.
4. Bake 30 to 40 minutes or until crust is golden brown. During last 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. Let stand 5 minutes before serving.

1/4 cup sugar
1 tsp. cinnamon
1 Tbsp. cornstarch
Pinch of salt
8 cups Granny Smith apples
2/3 cup regular oats
1/2 cup brown sugar
1 Tbsp. flour
1/4 cup butter, melted

Combine sugar, cinnamon, cornstarch and salt and mix well.
Peel and slice apples and place in and 8 x 8 baking dish.
Sprinkle with sugar mixture. Combine oats, brown sugar and
flour and sprinkle over apples. Drizzle melted butter over
apple mixture and bake for 30 minutes at 400 degrees.
Serve with vanilla ice cream.

The Skinny: Use your favorite sugar substitutes.
You can also serve this dish with frozen yogurt rather than
ice cream to cut down on the calories.

off the oil, leaving as much of the drippings as possible. Add 4TBS butter,
melt the butter in the pan, then add 4TBS flour stir until thickened. Add
about 1 cup of milk stirring constantly, and salt and pepper to taste Stir

2 tablespoons water
2 pieces top round steak, cubed -- about 6-8 ounces ea.
peanut oil for frying
Gravy (cream sauce)
2 tablespoons flour
2 tablespoons butter
1 1/2 cups milk

Put the flour, pepper, and salt in a plastic bag and mix. Beat the egg with
the water, with a fork, until frothy. Drop one piece of steak into the
flour and coat, then dunk into the egg, then coat with the flour again.
Repeat with other piece of steak. Heat the oil until a cube of bread
browns in one minute.
Fry in the hot oil until browned crispy on both sides and cooked through.
Serve with white gravy (cream sauce).

Gravy: Melt the butter in a frying pan over low heat. Stir in the flour
and stir for one minute. Take the frying pan off the heat and stir in the
milk until smooth. Return the pan to the heat, turn the heat up to medium,
and cook, stirring, until bubbly and thickened.

2 and 1/2 cups dry bread cubes (about 4 slices of bread)
1/3 cup raisins
4 eggs, beaten
2 cups milk
1/3 cup sugar
1 tsp. ground cinnamon
1/2 tsp. vanilla extract
1/4 tsp. salt

Put bread cubes in 9-inch round baking dish.
Sprinkle raisins over bread cubes. Mix together
remaining ingredients and pour over raisins and bread cubes.
Bake for 45 minutes in 325 degree oven or until knife comes
out clean when inserted near the center. Serve warm.

2 c Chicken stock (approx.)

Mix 1/2 cup of the flour, the salt and the pepper together. Pound the
mixture into both sides of the meat with the edge of a heavy plate or
mallet. Cut the meat into serving-size pieces. Beat the eggs together with
the cream. Heat the oil in a heavy iron skillet over moderately high heat.
Reserve 3 tablespoons of the flour. Dredge the steaks in the remainder of
the flour, dip in the egg mixture, and then into the cracker crumbs. Add to
the hot oil. Brown the steaks well, turn and brown the other side. Reduce
heat to medium, cover the skillet, and cook for 15-to-20 minutes, turning
occasionally, until the steaks are cooked through and tender. Chicken-fried
steak should be well done, but not dry. Remove the steaks from the pan, and
drain on paper towels. --- GRAVY FIXINGS --- Pour off all but 3 tablespoons
of the fat in the skillet, and stir in 3 tablespoons of the flour. Stir to
incorporate any particles in the bottom of the pan and cook for 1-to-2
minutes. Stir in the cream, then the chicken stock. Slice the meat across
the grain and top with the gravy. It's great served with mashed potatoes,
homemade biscuits or cornbread, and a green vegetable.

Dessert: Baked Alaska



1 quart ice cream in block form
1 one inch piece sponge cake
5 egg whites
1 tsp. vanilla
1/2 tsp. cream of tartar
1 cup sugar

Make sure cake is larger on all sides than ice cream block.
Place cake on piece of tinfoil. Place ice cream block on top of
cake. Cut cake so that it is approximately 1 inch wider than
ice cream on all sides. Cover cake/ice cream combination and
freeze for one hour or until firm. Beat egg whites, vanilla
and cream of tartar until mixture forms soft peaks. Add sugar
and beat into stiff peaks. Place cake and ice cream on baking sheet.
Spread egg white and sugar mixture all over cake and ice cream
and seal at edges all around. Bake in 450 degree oven for about
3 - 4 minutes until golden brown. Slice and serve right away.

Title: ANOTHER CHICKEN FRIED STEAK

1 lb Boneless beef cut
- into 4 serving pieces
1 c Flour, total
1 Egg
1/4 c Milk
1 md Onion, chopped
1 c Chicken broth
1 c Heavy cream
2 tb Fresh parsley chopped
- (or 2 tsp. dried)
Veg. oil to fry steaks

Pound steaks to about 1/4" thickness. Rub both sides with salt, pepper,
paprika and garlic powder. Heat oil in a large skillet, oil should be about
1/4" high. Beat egg and milk together in a bowl. In another bowl, season
the flour with salt, pepper, paprika, and garlic powder. When the oil is
hot, dredge the steaks in the flour, then in the egg mixture, then back
again in the flour. Place them immediately in the skillet. Fry on both
sides until golden brown. Remove and set aside. Remove most of the oil from
the skillet, leaving behind the bits of meat etc. Reheat the oil and add
the onion. Cook until golden then add about 3 Tbsp. of flour, whisking it
in. Gradually whisk in the chicken broth scraping the bottom well, add a
little water if it is still too thick. Bring to boil then add cream and
parsley and cook another minute. Serve with mashed potatoes, corn bread, or
biscuits.
